
Skillet Chicken Fajitas in Cast Iron Skillet
We Love Quick and Easy Chicken Fajitas!
There is just something about chicken fajitas sizzling in a cast iron skillet that we can’t get enough of! Most of us had our first experience with fajitas in our favorite Mexican restaurant where we curiously watched the waitress or waiter carry a delicious smelling and somewhat noisy plate of grilled beef or chicken to a lucky nearby table.
The fajitas were always served with a nice warm basket of tortillas followed with little dishes of cheese, tomatoes and plenty of sour cream.
Now we don’t need to wait for dinner out to prepare these delicious chicken fajitas!
Any type of fajitas are such an easy dinner to prepare and should be added to your list of meals to cook every couple of weeks. Mix up your own fajita seasoning beforehand, and from start to finish, fajitas should take about 20 minutes to get on the table. Hey, that’s quick!
Skillet Chicken Fajitas
Making chicken fajitas at home is easy using your skillet!
- 1-1/2 lbs. boneless chicken breasts, cut into thin strips
- 1/2 tablespoon fajita seasoning
- 1 lime
- 1 red pepper, cleaned and julienned
- 1 green pepper, cleaned and julienned
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1-1/2 tablespoons oil, divided
Fajita Seasoning
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sweet paprika
- 1/2 teaspoon cumin
- 1 teaspoon sugar
- 1 teaspoon salt
- 6-8 flour tortillas

Mix together the fajita seasonings in a small bowl.

Lay chicken in a small dish and rub with 1/2 tablespoon of oil and juice from 1/2 of the fresh lime.

Sprinkle both sides of the chicken with fajita seasoning and let sit for 30 minutes.

Spray a large skillet with nonstick spray and add 1/2 tablespoon oil. Heat skillet over medium-high heat and cook chicken strips for about 4-5 minutes.

Remove chicken to a plate and add the peppers, onion and garlic to the skillet with remaining oil.

Cook about 6-7 minutes or until onions and vegetables are tender.

Add the chicken back to the pan, squeeze the other half of the lime juice over all and sprinkle with additional fajita seasoning. Stir and let cook together for about 2 minutes

Let the chicken marinate for at least 30 minutes.
Assemble fajitas using flour or corn tortillas and all your favorite toppings.
- Cheese (lots of cheese!)
- Diced Tomatoes
- Salsa
- Sour Cream
- Guacamole
- Chopped Avocado
- Jalapenos
- Chopped Fresh Cilantro
- Lettuce

You won’t always have the time or the ingredients on hand to make your own chicken fajita seasoning, so always keep a few packets of taco or fajita seasoning in your pantry. Buy an all-purpose spice holder/shaker at the dollar store to keep your seasonings and they will stay fresh for months.
You will have enough of your homemade easy fajita seasoning leftover to make additional chicken fajitas.
