Salads are pretty simple to prepare, so this makes for a quick breakfast to assemble in the morning. Even if you don’t have time to eat a salad for breakfast every morning, this makes for a great weekend healthy breakfast!
2 cups of raw leafy greens equals one cup of vegetables. We need at least 2-1/2 cups of vegetable servings per day so you are half way there!
Pair this with a slice of whole grain toast and the day will be simply amazing!
Salad for Breakfast with Soft Boiled Eggs
- 6 Romaine lettuce leaves (about 2 cubs)
- 1 soft boiled egg (peeled and cut in half)
- 1/2 cup chopped red pepper
- 2 slices avocado
- 1/4 cup feta crumbled feta cheese
- 1 tablespoon toasted sunflower seeds
- Cook whole egg in lightly boiling water for 5-7 minutes.
- Peel cooled egg and chop into 2-4 pieces.
- Clean the romaine lettuce leaves and chop small.
- Place lettuce on a plate and top with eggs and vegetables.
