Curried Chicken Salad
Try something different with this curried chicken salad that you will fall in love with.
- 4 cups shredded chicken
- 3/4 cup diced celery
Sauce Ingredients
- 1/2 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 2 teaspoons honey
- 2 tablespoons Smucker's Simply Fruit, Apricot
- 1/4 teaspoon pepper
- 1/2 teaspoon salt

Place chicken and celery in a bowl and lightly salt & pepper.

Mix together sauce ingredients in a small bowl. Pour over chicken and celery. Stir gently to coat with sauce.

Leave in the refrigerator for an hour before serving.

We love the mayo/yogurt dressing that goes on this chicken salad. It’s light and refreshing and a great change of pace from standard dressing.

How to Easily Make Shredded Chicken
Oven Roasted Chicken Breasts
3 1/2 pounds split chicken breasts (bone-in, skin-on)
1/2 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
Preheat oven to 350 degrees F.
Spray a baking sheet with nonstick spray. Rub chicken breasts with olive oil and lightly sprinkle with salt and pepper.
Bake for about 45-55 minutes or until chicken is cooked through. Remove from oven and let cool. Shred chicken using two forks.
Stove Top Cooked Chicken Breasts
1-1/2 lbs. boneless chicken broth
can chicken broth
salt & pepper
Lightly salt and pepper both sides of chicken breasts. Place chicken breasts in a sauce pan with chicken broth. Bring broth to a light boil; reduce heat and cover. Simmer for about 8-10 minutes or until chicken is cooked through.
