Eggs and Asparagus for a Healthy Breakfast
What a great way to start your day! Asparagus contains the type of fiber that promotes healthy gut bacteria and a healthy gut is a happy gut!
By adding vegetables to your morning breakfast, you are sure to get your 5-6 servings of vegetables per day. Add a little pan roasted tomatoes for an extra kick of flavor and nutrients.
Steam the asparagus while cooking the eggs or simply cook in a skillet of lightly boiling water for about 3-4 minutes. Don’t overcook the asparagus or it could get soggy.
It takes about 5 minutes to steam asparagus and the benefits of steaming vs. roasting is less fat and calories. Drizzle a little lemon juice, salt and pepper on the asparagus while steaming and you won’t miss the fat from butter at all.
Eggs and Asparagus for Breakfast
Poached Egg with Lightly Steamed Asparagus and Pan Roasted Tomato for a healthy start to your day.
- 1 bunch of fresh asparagus (cleaned and ends snapped off)
- 4 large eggs
- salt & pepper
- 1/4 of a fresh lemon
- Steam asparagus for 5 minutes.
- Lightly add lemon, salt and pepper to asparagus while steaming.

Poach 4 eggs over easy. While eggs are poaching, fry tomatoes in a little olive oil and a sprinkle of salt and pepper.

Serve eggs on top tomatoes and asparagus.
Add a side of whole wheat toast and some fresh strawberries and you get an AMAZING start to your day.
