Simple Rotisserie Chicken Recipe
- 2-1/2 lbs. bone-in chicken breasts
- 2 teaspoons smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon dried mustard
- 2 tablespoons olive oil
- 1/2 tablespoon soy sauce
- Preheat oven to 375 degrees.
- Spread foil on a small cookie sheet or baking pan.
- Poke holes in chicken using the tip of a sharp knife or a fork
- Place chicken on the baking sheet and rub with olive oil.
- Rub the soy sauce into the chicken.
- Using a small cup, mix together all the spices including the salt.
- Rub spice mix into the chicken.
- Leave sit on the kitchen counter for 30 minutes.
- Bake chicken for 45-50 minutes or until meat thermometer reaches 165 degrees.

Sprinkle the spice blend over the chicken and use your fingers to rub in the chicken. Add additional olive oil if needed. Always check the chicken about half-way through cooking.
