Simple Healthy Breakfast Potatoes
Serve some healthy carbs with your breakfast by making these delicious potatoes.
- 2 lb. baby red potatoes, cut into small chunks
- 2 tablespoons olive oil
- 4-6 cloves garlic, finely minced
- 1 small red pepper, chopped into small pieces
- 2 tablespoons feta cheese
- salt & pepper
- Preheat oven to 425 degrees.
- Brush a little olive oil on a baking sheet.
- Lay potatoes and red pepper on the baking sheet and drizzle olive oil over both.
- Lightly toss until well covered with oil.
- Lightly salt & pepper.
- Bake in the oven for 20 minutes.
- Carefully remove from the oven and stir with a metal spatula.
- Sprinkle the garlic on top of potatoes and pepper and put back in the oven.
- Bake for an additional 15-20 minutes.
- Sprinkle with the feta cheese and serve.
If you love garlic as much as we do, you can also sprinkle a little garlic salt on the potatoes before cooking.
