
Spices can add a ton of flavor to meats without adding a lot of extra calories. Many of the dishes that we are drawn to are filled with salt and fat, but by using spices instead, we can actually trick our taste buds into thinking many of dishes we cook are delicious while still being more nutritious.
This chicken is tender and juicy and filled with flavor. And even better than that, it’s quick!
Quick Spice Rubbed Chicken
1-1/4 lbs. boneless chicken breasts, *sliced or pounded extra thin
1-1/2 Tablespoons olive oil, divided
Spice Rub:
2 tablespoons brown sugar
2 teaspoons paprika
2 teaspoons cumin
2 teaspoons garlic powder
1 teaspoon onion powder
2 teaspoons paprika
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Make sure you start with thin pieces of chicken breasts. Rub each piece of chicken with a little olive oil. Combine the sugar and spices in a small bowl and rub the mixture over each side of the chicken. Let sit for about 15 minutes.
Add 1 tablespoon of olive oil to a skillet and bring to medium-high heat. Cook chicken on both sides until nicely browned, about 2 minutes per side. Turn the heat to medium-low and cover the skillet. Cook for about 2 additional minutes or until chicken is cooked through.
