Cod is a mild white fish that doesn’t taste “fishy” so even the kids like it.
When you use Panko bread crumbs the topping comes out nice and crispy. Real mayonnaise gives a nice moist layer that keeps the fish tender and flaky.
You really can’t go wrong when you use fresh cod in your fish recipes. It’s one of the most widely used fish in restaurants and one of the most tastiest.
Parmesan Crusted Cod.

- 1 lb. cod fish
- salt & pepper
- fresh lemon juice
- 2 tablespoons mayonnaise
- 1/4 teaspoon garlic powder
- 1/3 cup shredded Parmesan cheese
- 1/3 cup Panko Breadcrumbs

Preheat oven to 400 degrees.

Lay a piece of foil on a baking sheet and spray with nonstick spray.

Lightly squeeze fresh lemon juice on both sides of the cod and then lightly salt and pepper. Lay fish, skin side down on the foil.

Mix together the mayonnaise and garlic powder. Spread a thin layer on top of the fish.

Sprinkle fish with Parmesan cheese and then the Panko bread crumbs.

Bake for about 15 minutes or until fish is cooked through.

Sate internal temperature for fish is 145 degrees.

Parmesan Crusted Cod is ready to be baked in the oven.
We served our cod over delicious basmati rice and a side dish of peas and carrots. Peel and julienne 3 carrots and then lightly steam in a steamer basket. Cook peas according to package directions and drain of all water. Add a little butter, salt & pepper to the peas and then cooked carrots.
