
Orzo Pasta with fresh Cherry Tomatoes, Spinach and Cheese
This orzo pasta dish tastes amazing and something we make often in the summer.

My neighbor brought over a bowl of perfect little cherry tomatoes she had just picked from her garden. One of my favorite recipes for cherry tomatoes immediately came to mind.
So happily I decided to make it one last time before all the garden tomatoes disappear! This is another recipe that only uses a few ingredients but tastes super delicious!
So if you get lucky and your nice neighbor brings you some luscious tomatoes, give this recipe a try and you will fall in love.
Orzo Pasta with fresh Cherry Tomatoes, Spinach and Cheese
- 1 cup orzo pasta
- 1 can chicken broth
- 1 cup water
- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- salt and pepper to taste
- 1/2 teaspoon sugar
- 1 or 2 teaspoons minced garlic (I use organic garlic in a jar for this)
- 2 cups fresh chopped spinach
- 1/2 cup crumbled Gorgonzola cheese
- Cook orzo pasta in chicken broth and water until tender.
- Drain pasta and reserve 1/2 cup of the broth.
- While the pasta is cooking, slice the cherry tomatoes in half. Add olive oil to the skillet and cook tomatoes for about 3 – 4 minutes or until tender.
- Lightly salt and pepper tomatoes while cooking and sprinkle with the sugar.
- Add the spinach to the pan with the tomatoes and the 1/2 cup of reserved broth.
- Let this cook for about 3-4 minutes or until the spinach is tender. Add the cooked pasta and cheese.
- Stir well and enjoy!

The cherry tomatoes smell delicious!

Add the fresh spinach and reserved broth.
