Chef David & Terri debuted a brand new cooking show this summer called Between the Eats!
We are thrilled to have a new cooking team right here in Pittsburgh and can’t wait to follow their new show!

We were lucky enough to catch them at the Oil & Vinegar store located in South Hills Village where they showcased one of their segments “New Mediterranean” cooking.”

The Oil & Vinegar store has a huge Mediterranean section that offers a nice selection of imported deliciousness such as: sauces, salad dressings, olives, marinated vegetables, sun-dried tomatoes, honeys, fig spreads, dried herb mixes.

While watching the cooking show Between the Eats, you can’t help being very curious about the tagine they used to make the Mediterranean Lemon & Chicken Dish on their show.
A Tagine is a beautiful ceramic cooking vessel. Even the word cooking vessel sounds romantic and Mediterranean flavored. We of course had to purchase one from the Oil & Vinegar store and could feel the excitement building knowing that our first Mediterranean meal will be cooked in this beautiful …. vessel.
The Tagine consists of two parts: a base unit that is flat and circular with low sides and a large cone- or dome-shaped cover that sits on the base during cooking. The dome-shaped cover is designed to promote the return of all condensation to the bottom. (Wikipedia)

We used boneless chicken thighs as Chef David suggested and the meal turned out fantastic. We couldn’t help ourselves from lifting the lid on the Tagine often and taking a peak and sniff at the delights inside!
One nice thing about the Tagine is it also is used as your serving dish. It makes a beautiful display on your dinner table.
This meal was so easy to prepare and the taste was out-of-this-world delicious. Don’t worry, this meal can be made right in your skillet and you will still get the wonderful tastes and smells of the Mediterranean.

For our Mediterranean Lemon Chicken dish we used the following:
- 5 boneless chicken thighs
- 1 tablespoon olive oil
- 1 lemon
- 1/2 large bulb garlic
- 1 small onion
- green olives
- capers
