
Mexican Taco Lasagna Recipe – Saucy and Cheesy!
Cinco de Mayo is celebrated on May 5th in the United States as a way for us to celebrate the Mexican culture. It’s actually not the real reason for Cinco de Mayo, but it has become an event that many look forward to each year.
The United States is made up of a unique blend of food from cultures all over the world. We tend to think of food in “groups” and we all have our favorite group. We rarely say “let’s go eat tacos tonight,” but we will say, “let’s go get Mexican.”
So here is a quick and easy Mexican Taco Lasagna meal that you can easily whip up for a tasty Cinco de Mayo and celebrate a little Mexican culture in your house! We have replaced traditional lasagna noodles with flour tortillas and the result is scrumptious.
Mexican Taco Lasagna
This Mexican Taco Lasagna is so Easy to Prepare and a Dinner the Whole Family Will Love!
- 1-1/4 lb. ground beef
- 1 small onion (chopped)
- 1 package taco seasoning mix
- 1 small can black olives
- 1 (29 oz) can tomato sauce
- 6 Burrito size flour tortillas
- 2 cups cheddar Jack shredded Cheese
- sour cream (optional)
- Brown ground beef and onions until beef is cooked through.
- Lightly salt & pepper beef while cooking.
- Drain any grease and stir in the taco seasoning mix.
- Stir beef until seasoning is well blended and then add the tomato sauce and olives.
- Spray a 9″ x 13″ with nonstick spray and spoon about 6 tablespoons of the sauce on the bottom of the dish.
- Place 2 tortillas on top of sauce; overlapping. Spread more sauce on tortillas and then cheese.
- Repeat the layer with 2 more tortillas, sauce and cheese.
- Finish with another layer of tortillas and the rest of the cheese. Bake uncovered for 20 minutes.

Next add the sauce and the cheese. Bake uncovered for 20 minutes. A great topping to serve on the side is sour cream. Add a basic tossed salad to the meal, and you have a complete and delicious dinner.
