
Maple Glazed Pork Chops with Sweet Potato Hash
Pork chops and sweet potatoes go so well together and that’s what makes this meal really work. This is a healthy meal but it’s also sweet and yummy which will appeal to kids.
You can feel really good about serving this for dinner because it’s chalked full of vitamins and you definitely won’t get any complaints!
There are so many different varieties of maple syrup that you are sure to find one that is relatively healthy compared to the old maple syrups that were really heavily-laden high-fructose corn syrup with a bit of maple flavoring.
Maple Glazed Pork Chops with Sweet Potato Hash
Sweet Potato and Spinach Hash
- 2 large sweet potatoes, peeled and diced into small pieces
- 1 tablespoon water
- 1 small onion, diced fine
- 1 tablespoon olive oil
- 1 tablespoon Balsamic vinegar
- 1 bunch fresh spinach, cleaned and chopped fine
Simple Maple Glazed Pork Chops
- 6 pork chops, lightly salt & peppered
- salt & pepper
- 1 tablespoon olive oil
- 1/2 cup maple syrup
- 1-1/2 tablespoons cider vinegar
- 3 teaspoons Dijon mustard
Place potatoes in a bowl and lightly salt. Add 1 tablespoon of water and cover. Microwave for 7-8 minutes.
While potatoes are in the microwave, add 1 tablespoon of olive oil to a large skillet and cook pork chops on both sides until well browned. Remove pork chops to a plate.
Add 1 tablespoon of olive oil to the same skillet and the sweet potatoes and onions. Lightly salt and pepper potatoes and cook for about 5-6 minutes or until potatoes are tender. Stir often. Add the spinach and sprinkle with Balsamic vinegar. Cook for 2-3 additional minutes, stirring often.
Transfer potatoes to a serving bowl. Using the same skillet, add the maple syrup, cider vinegar and mustard; stir well. Add the pork chops and turn to coat in the sauce. Cook for about 2 minutes or until pork chops are cooked through.
Dice the sweet potatoes small to ensure a faster cooking time.

Brown the pork chops with a little salt & pepper.

Saute the Sweet Potato and Spinach.
