
How To Make Gravy from scratch with flour
No matter what the occasion, you always want your gravy to turn out silky smooth and delicious. Gravy is such an important part of the meal that it even has its own container. The gravy boat!
When you slow roast a chicken or turkey, there is normally a decent amount of drippings on the bottom of the pan to be used for a delicious homemade gravy. Never throw out the turkey drippings as this makes the best gravy.
My Mom’s Thanksgiving Gravy
Watching my Mom make gravy for Thanksgiving dinner was like watching a professional chef at work. Cooking skills were a must when you had a large family to feed and my Mom could make the best turkey gravy in under 2 minutes.
She could also debone a turkey, start the leftover turkey soup, and store the leftovers with not one bit of waste, in under 10 minutes.
When we sat down to Thanksgiving dinner, everyone eyed the gravy boat to see if it was in reach. This was an important part of the Thanksgiving feast. If you have a large table at your occasion, use 3-4 gravy boats.

Here are the steps to make the best tasting turkey gravy for any special occasion!
- Remove the turkey from the roaster pan and carefully pour the excess turkey drippings from the bottom of the pan into a large glass measuring cup.
- Let this sit until the fat rises to the top.
- Skim off the fat from the top using a spoon. Place this fat into a small cup.
- Add chicken broth to the turkey drippings in the glass measuring cup until you get 4 cups total.
- Add 4 tablespoons of the fat back into the roaster pan and 1 tablespoon of butter. Or you can use a medium sized pan if you don’t want to use the roasting pan you cooked the turkey in.
- Place the roasting pan over medium-high heat and slowly add the flour, whisking constantly with a wire whisk to form the roux. Add a little bit of salt and pepper to the roux. Cook for about 2 minutes, stirring constantly.
- Gradually add the 4 cups of liquid to the pan, starting with about 1/2 a cup. Make sure the heat is turned up and pour in the broth slowly. Whisk constantly until you start to see a creamy gravy/sauce develop.
- Add additional salt, pepper and thyme to taste.
- Add about 2 teaspoons of “L.B. Jamison’s Chicken Flavored Soup Base” to enhance the flavor of the gravy.

What you Need To Make Turkey Gravy
- Turkey Drippings
- Reserved Fat from Drippings
- chicken broth to equal 4 cups of liquid
- 1 tablespoon butter
- 6 tablespoons flour
- salt, pepper and 1 teaspoon dried thyme
- 2 teaspoons of Better than Bouillon
What is a Roux?
Roux is just a method of mixing flour with fat to thicken foods. Basic Roux is melting 2 tablespoons of fat (or butter), whisking in 2 tablespoons of flour, and adding 1 cup of liquid to equal 1 cup of gravy.
