How to Make Delicious Beans and Greens
Beans and Greens are simple to prepare and will leave your hunger totally satisfied. This dish is just filled with nutritious ingredients and plenty of fiber that will leave you feeling full and ….. happy!
This makes a great side dish or a main dish if you add a big loaf of Italian bread & butter.
Beans and Greens also travel well so leftovers can be packed into work or school lunches.
You can also add some of your other favorite greens to this recipe or any leftover romaine lettuce you might have. Add a little more olive oil and chicken broth if you would like some of that delicious broth to eat with bread and butter!

How to Make Greens and Beans
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 small onion (chopped fine)
- salt & pepper
- 1 bunch of fresh spinach (washed and chopped)
- or 2 cups frozen chopped spinach
- 1 cup finely chopped kale (clean and remove ribs)
- 1 cups chicken broth (additional if needed)
- 1 15 oz. can great northern beans
- 1/4 of a lemon
- Parmesan cheese (optional)
- Using a medium skillet, saute onions in olive oil until soft.
- Add garlic and saute for about 2 additional minutes or until soft.
- Sprinkle a little salt & pepper
- Add spinach and kale to the pan and additional olive oil if needed.
- Sprinkle a little salt & pepper
- Saute for about 2-3 minutes.
- Add chicken broth and beans to the skillet.
- Sprinkle a little salt & pepper
- Squeeze lemon over top and simmer for about 2-3 minutes.
