Our favorite way to cook butter nut squash is roasted with just a hint of brown sugar and a speck of butter. Baked butternut squash goes great as a healthy side dish with most meats.

Roasted Butternut Squash
- 1 butternut squash
- salt & pepper
- 1 tablespoon olive oil
- 1 tablespoon brown sugar
- Preheat oven to 400 degrees.
- Poke a few holes in the squash and microwave for a few minutes to soften the outer shell.
- Carefully cut butternut squash in half lengthwise and use a large spoon to scoop out seeds.
- Place butternut squash on a baking sheet skin side down.
- Brush squash halves with olive oil. Sprinkle squash with salt, pepper and brown sugar.
- Bake 40-45 minutes or longer depending on the size of the squash.
