
Delicious and Healthy White Bean Soup
Nothing smells more like fall than a nice big pot of homemade soup simmering on the stove.
Many memories have been made simply by serving your favorite soup around fall activities. A nice warm pot of soup awaits everyone after a chilly hike through the woods or raking leaves on a crisp cool day.
This soup is delicious and nutritious at the same time filled with all good things for your family.

Healthy White Bean Soup
- 2 tablespoons olive oil
- 1 medium onion (diced fine)
- 3 cloves garlic (diced fine)
- 3 carrots (cut into very small pieces (1 full cup))
- 2 turkey sausage links (cut into small slices)
- 1 small bunch fresh spinach (chopped fine (2 full cups))
- 2 15.8 cans great northern beans
- 3-1/2 cups chicken broth
- 1 teaspoon thyme
- 1 tablespoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 tablespoon cornstarch (more if needed)
- Using a medium soup pot, saute onions for about 3 minutes in olive oil.
- Add the carrots and garlic to the pot and saute 3 more minutes.
- Add the sausage to the pot and continue to saute for about 2 minutes.
- Add the spinach and continue to cook and stir for 2 minutes.
- Add the beans, chicken broth, spices, salt and pepper to the pan and stir.
- Bring to a light boil; reduce heat and cook on a light simmer for 20 minutes.
- **** Make a quick cornstarch slurry to thicken soup. Start with 1/2 tablespoon of cornstarch in a small cup. Add equal amounts of water and stir until a smooth paste forms. Stir the slurry into the soup and bring soup to a light boil. Repeat if you want a thicker soup.
