
Healthy Rice with Avocado and Lime
The avocado or “alligator pear” is known best for it’s creamy buttery flavor, but it’s also a nutrition packed fruit that when added to foods provides numerous health benefits. Read why you should be eating more Avocado.

The flavors in this rice dish are super-delicious so there’s a good chance all the ‘non avocado lovers” will enjoy this as well.
Healthy Rice with Avocado and Lime
- 1 tablespoon olive oil
- 1 small onion (chopped fine)
- 3 cloves garlic (chopped fine)
- 12-14 cherry tomatoes (cut in half)
- salt & pepper
- 1 cup long-grain rice (uncooked)
- 2-1/2 cups chicken broth
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1 avocado * see directions below
- 1 small lime
- Use a medium sauce pan with a tight fitting lid.
- Saute onion and garlic in olive oil until soft.
- Add cherry tomatoes; sprinkle with salt & pepper to taste.
- Cook for 2 minutes or until tomatoes are soft.
- Add rice and cook for 1 minute.
- Add chicken broth, 1/2 teaspoon salt and cumin; stir until everything is combined.
- Bring to a light boil; cover, reduce heat and cook for 18-20 minutes.
- In a small bowl, mix together 1 tablespoon of lime juice and the avocado until creamy.
- Remove rice from the heat and gently stir in avocado and lime mixture.
DIRECTIONS FOR PREPPING THE AVOCADO
*Cut the avocado in half using a sharp knife. You will have to cut around the center stone.
Use a small spoon to dig the center stone out. The stone should come out easily.
Scoop out the flesh of the avocado using the spoon and discard the outer peel.
