Well pull out that crockpot and in about 3 minutes from start to finish for prep time, you will a tasty and very healthy side dish.

Healthy Crockpot Brown Rice with Broccoli
- 2-3/4 cups chicken broth
- 1 cup uncooked brown rice
- 1 head fresh broccoli (cleaned and remove stems)
- 1 tablespoon olive oil
- salt & pepper
- 2 tablespoons fresh Parmesan cheese or can also use cheddar cheese
- Pour chicken broth into crockpot and then add the brown rice.
- Lay broccoli pieces on top of the rice.
- Lightly salt & pepper everything.
- Cook on high for about 2-3/4 hours. (Do not lift the lid to peak)
- Remove lid and add a little additional chicken broth if necessary.
- Drizzle the olive oil and cheese over top and give a quick stir.
- Place the lid back on the crockpot and cook for about 15 more minutes.
- if you want crispier broccoli, add the broccoli during the last 30 minutes of cooking.
