
Healthy Cabbage Soup Recipe
Eat more cruciferous vegetables and stay healthy the experts say! When you talk about cruciferous vegetables, the first thing that comes to mind is the beloved cabbage head. Love it or hate it – cabbage is a powerhouse of fiber and nutrients that we really need to add to our diets.
Cabbage is also high in Vitamin C and a mere 35 calories per cup! Try this healthy cabbage soup recipe that not only help fill you up without a lot of extra calories, but will provide enough fiber to keep you feeling fuller much longer.
When making this cabbage soup recipe, shred the cabbage pretty fine and let sit for about 10-15 minutes before cooking. This helps the cabbage to release extra nutrients and cut cooking time that can damage them. Do the same with the garlic. Peel and chop the garlic and let it sit for about 10 minutes before cooking.
The little bit of lemon really enhances the flavor of this soup. Add a little or add a lot but don’t skip the lemon.
If you are planning on storing and eating the soup for a few days, you may want to have extra chicken broth on hand to add when reheating. The vegetables will continue to soak up the broth so adding a bit more is often necessary. Enjoy!
Healthy Cabbage Soup Recipe
Healthy meets delicious with this robust cabbage soup
- 1 small head of green cabbage (shredded fine (4 cups))
- 1 tablespoon olive oil
- 1 onion (diced fine)
- 4-6 cloves garlic (diced fine)
- 1-1/4 cups chopped carrots
- 1 small green pepper (diced (about 3/4 cup))
- 1 32 oz carton of chicken broth (4 cups)
- 1/2 cup water
- 1/2 6 oz. can tomato paste
- 2 teaspoons sweet paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- fresh lemon
- Shred the cabbage and let sit for 10-15 minutes
- Finely chop the garlic and also let sit for 10-15 minutes.
- Saute onion in olive oil until tender.
- Add the carrots, pepper and garlic and continue to cook for a few minutes.
- Add the cabbage and saute another few minutes until all the vegetables are soft.
- Add the chicken broth, water, tomato paste, paprika, oregano, salt and pepper.
- Stir well to combine.
- Bring to a light boil; reduce heat and let simmer for 20-25 minutes.
- Add 1/2 tablespoon of lemon juice about half-way through cooking. Add more if necessary.

Saute vegetables until slightly tender.
