
Hawaiian Beef Meatballs with Pineapple – Perfect for a Luau or Back Yard Picnic/Party

Hawaiian Meatballs with Pineapple
- 1 small can pineapple chunks (juice reserved)
- 1 jar maraschino cherries
- 3 lbs ground beef
- 3 eggs
- 3 tablespoons of soy sauce
- 3/4 cup brown sugar
- 1/4 cup of reserved pineapple juice
- 3 tablespoons dried minced onions
- 2 teaspoons dried ginger
- 1-1/2 cups bread crumbs
- 1-1/2 teaspoon salt
- 1/2 teaspoon pepper
- Preheat oven to 400 degrees.
- Line a cookie sheet with foil and spray lightly with nonstick spray.
- Mix everything together with the exception of the pineapple chunks and the maraschino cherries.
- Gently mix the beef using your hands.
- Form small meatballs and place each one on the cookie sheet.
- Bake for 12-14 minutes depending on size.
- (Mix some of the meat with finely chopped cherries and pineapple for a delicious sweet meatball.)
- Use the rest of the cherries and pineapple to garnish a few of the meatballs.
