GROUND CHICKEN AND SPINACH MEATBALL MARSALA
The sauce with these meatballs really makes this meal shine! These are quick and easy to prepare without a lot of prep work and just a few simple ingredients.
These are just perfect for a weekday meal when you don’t have a lot of time to cook but still want something tasty. Invest in a quality bottle of Marsala wine from the liquor store instead of the salty wine you buy in a grocery store. A decent bottle is only around $8.00 – $10.00 and saves quite nicely in the refrigerator.
Ground Chicken And Spinach Meatball Marsala
Marsala Wine makes these chicken meatballs savory and delicious
- 1 lb. ground chicken
- 1 medium onion (chopped fine)
- 1 tablespoon butter
- 1 tablespoon oil
- 1 bunch of fresh spinach (chopped fine (about 2 cups))
- 1 egg
- 1/2 cup bread crumbs
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/2 cups beef broth
- 3/4 cups Marsala wine
- 1 tablespoon Dijon mustard
- 1 teaspoon minced garlic
- 1 tablespoon cornstarch
- Put the spinach into a medium mixing bowl and lightly salt and pepper.
- Add the egg, breadcrumbs, onion powder, garlic powder, salt and pepper; mix well.
- Add the ground chicken and mix through the spinach.
- Form mixture into 12 meatballs.
- In a large skillet, saute the onions in butter and oil until soft. Remove onions to a small plate.
- Add a bit more oil to the skillet and turn the heat to medium-high.
- Brown the meatballs about 2-3 minutes per side. Add the onions back to the pan with the meatballs.
- In a small bowl, mix together the beef broth, Marsala wine, Dijon mustard, garlic and cornstarch. Add this to the skillet and bring to a light boil; reduce heat and simmer for 12 minutes.
- Turn meatballs a few times during cooking.
