
Garlic Rice Recipe for a Healthy Side Dish
We love garlic rice with tons of healthy garlic cooked in chicken broth with a little butter and Parmesan cheese. It’s almost decadent! This rice recipe is cooked often as a side dish because it’s very simple to prepare with only a few extra steps from plain rice – but makes the tastiest rice!
We love using chicken soup base to make a delicious tasting broth that really bumps up the flavor of our rice dishes. You can save money by using a soup base in your recipes instead of the more expensive cartons of chicken broth.
You can definitely use brown rice for this recipe, just let the rice cook about 20 minutes longer.
Garlic Rice Recipe
A Healthy Side Dish for Dinner that is Delicious and Easy to Prepare.
- 2-4 cloves garlic, chopped fine (chopped fine)
- 1/4 cup finely chopped onion
- 1 tablespoon olive oil
- 1 cup white rice, uncooked
- 2-1/4 cups water
- 1-2 teaspoons chicken soup base
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 1/2 tablespoon dried parsley
- 1/2 cup shredded Parmesan cheese
- Chop the garlic and let it rest on your cutting board for 10 minutes.
- Using a medium-sauce pan with a tight fitting lid, cook onions in oil for about 2 minutes.
- Add the garlic and cook for an additional 30 seconds.
- Add the rice and cook for about 1 minutes, stirring constantly.
- Add the water, soup base, salt and pepper; stir and bring to a light boil.
- Cover, reduce heat and let cook for 18-20 minutes.
- Remove from heat and stir in parsley, butter and Parmesan cheese.
There is no reason to cook and serve plain old rice when you have so many healthy additions and options! Definitely use real butter in this recipe and don’t substitute for margarine.
You can also toss in a cup of green peas to add some veggies to the dish or add a couple cups of chopped broccoli.
