A really nice thing about this dinner is LEFTOVERS! The leftovers heat up perfectly for the next day.
Easy Skillet Pasta Bake
Your Family is going to love this easy skillet pasta bake – just perfect for a busy night!
- 1 small onion (chopped)
- 3 cloves garlic (chopped)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 lb. lean ground beef
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 tablespoon Italian seasoning
- 1/2 tablespoon dried Parsley
- 1/4 teaspoon salt and 1/4 teaspoon pepper
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz.) can diced tomatoes
- 1/2 teaspoon sugar
- 1-3/4 cup chicken broth
- 8 oz. MINI rotini pasta, uncooked (about 3/4 of the box)
- 1 cup shredded Mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- Preheat oven to 350 degrees.
- Using a large skillet with a lid, cook the onions and garlic in butter and oil for about 5 minutes or until soft.
- Add the ground beef and turn the heat to medium-high. Sauté beef until cooked through. Salt and pepper ground beef while cooking.
- Sprinkle remaining seasonings on the beef when the beef is almost browned.
- Add crushed tomatoes, diced tomatoes, sugar and chicken broth to the pan with the beef; stir well to combine.
- Bring mixture to a light boil and add the pasta. Stir pasta into the sauce and again, bring to a light boil. Continue cooking for 5 minutes, stirring often.
- Cover and lower the heat to a low simmer and cook for 5 additional minutes.
- Spray a casserole dish with nonstick spray. Spread 1/2 of the mixture in the bottom of a casserole dish. Sprinkle with 1/2 of the parmesan cheese and 1/2 of the mozzarella cheese. Repeat the same layer, spreading remaining pasta on top and sprinkle with remaining cheese. Bake for 10-12 minutes or until hot and bubbly.
