This is a great dinner recipe to make for meatless monday, saving money and your health at the same time.
We like to serve this easy mushroom cream sauce over a healthy pasta, but you could serve over quinoa or brown rice and it would be just as delicious.
Easy Mushroom Cream Sauce
- 1 8 oz. package sliced mushrooms
- 1/2 tablespoon coconut oil
- 2 tablespoons organic butter
- 3 cloves garlic (diced fine)
- salt & pepper
- 1/2 teaspoon dried thyme
- 3 green onions (cleaned and sliced)
- 1/4 cup fresh parsley (cleaned and chopped fine.)
- 1/2 cup organic half & half
- In a medium skillet, saute mushrooms and garlic in the coconut oil and butter for about 5 minutes.
- Salt & pepper the mushrooms while cooking and sprinkle with thyme.
- Add the green onion and parsley and cook for another 2 minutes.
- Add the cream and cook until hot.
