
Easy Crockpot Chicken and Wild Rice Soup
I was writing a post the other day called “Good Habits that you Can Start Today,” and one of the good habits on the list is to stop eating canned soup.
By now we know that most canned soups are filled with too much salt and tons of preservatives.
And if that’s not enough to be alarmed about, now we also have to worry that the soup cans are made with a chemical called BPA.
There so are many good reasons to make your own homemade soups, and one of those reasons is taste. Homemade soup just tastes so much better.
What about time you ask? Doesn’t it take a lot of time to chop, peel and dice your way to a delicious soup? Well, yes, sometimes it does, but the effort is always worth it in the end. Fresh and healthy homemade soup is the end result of your hard work!
Delicious Homemade Crockpot Chicken and Wild Rice Soup in Less Time!
Here is a recipe for anyone that doesn’t think they have time to make homemade soup. This is about as simple as it gets so let this be your “go to” easy Crockpot Chicken and Wild Rice Soup.
* Add about 3 cups of shredded chicken back to the crockpot and save the rest of the fresh chicken for another quick recipe or some chicken salad.
When we cook fresh chicken breasts in the crockpot, we like to cook more than we need so we have extra!
Easy Crockpot Chicken and Wild Rice Soup
- 1 32 oz. container chicken broth
- 4 cups water
- 1 6 oz. box Uncle Ben's Original Wild Rice
- 2 cups freshly peeled and sliced carrots (about 4-5 carrots)
- 2 teaspoons chicken base
- 2 teaspoons dried thyme
- 1/2 teaspoon salt
- 1 onion (peeled and cut in half)
- 3 stalks celery (cut into large pieces)
- 1/4 cup chopped fresh parsely
- 2 lb. whole chicken breast
- Add everything to the crockpot except the chicken and stir lightly.
- Lightly salt and pepper the chicken breasts and place them in the crockpot, breast side down.
- Cook on high for 4 hours.
- Remove chicken breasts, let cool a little and shred with a fork.
- Remove the onion and celery pieces and discard.
- Place chicken back in the crockpot and stir.
- Adjust seasoning by adding more salt, pepper or chicken base.
