We’ve added a little honey & mustard to the Greek yogurt to give this recipe a delicious flavor.
Make sure if you are using whole chicken breasts you slice them in half lengthwise. The thinner each piece of chicken is, the shorter cooking time and a juicer piece of chicken.
Easy Cornmeal Coated Chicken
Try this Easy Cornmeal Coated Chicken for a healthy chicken change of pace!
- 1-1/4 lb. boneless chicken breast
- 1 container Greek yogurt, plain
- 3/4 cup cornmeal
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1/8 teaspoon salt
- 1/4 teaspoon garlic powder

Preheat oven to 400 degrees F. Spray a baking sheet with nonstick spray.

Lightly sprinkle both sides of chicken with salt & pepper.

Mix together the Greek yogurt, honey, mustard and garlic powder and salt. Coat both sides of chicken pieces with yogurt mixture.

Sprinkle cornmeal on a plate and mix with a few sprinkles of salt.

Lightly dust each side of the chicken with cornmeal and lay on the baking sheet.

Bake for 15 – 20 minutes or until chicken temp. reaches 165 degrees F.

Lightly dust each side of the chicken breast with cornmeal.
