
Crunchy Cheesy Chicken and Cheddar Recipe
If you have any chicken finger lovers in the house then this recipe is for you! Chicken fingers are typically popular with kids, but this recipe with chicken AND cheddar cheese will have the whole family buzzing!
The Panko breadcrumbs mixed with the cheddar cheese makes for a delicious cheesy crunchy coating while the chicken remains tender and juicy.
Make your own dipping sauce by using 1 cup plain yogurt, 2 tablespoons of mayonnaise and 2 tablespoons blue cheese crumbles.
This really does make a delicious chicken dinner, and is ready in under 3o minutes!

Cooking Tips
- Start with thin pieces of chicken breasts. Either cut thick breasts on the diagonal with a sharp knife, or gently pound thin between two pieces of waxed paper.
- Mix the cheddar cheese and breadcrumbs with your fingers.
- Take your time coating the chicken. Roll the pieces around a few times and gently press the crumb mixture into the chicken.
Crunchy Chicken Cheddar
- 1 lb. boneless (skinless chicken breasts)
- 2/3 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 2 eggs
- 2 Tbsp. milk
- 1/4 teaspoon salt
- 1 cup shredded sharp Cheddar cheese
- 1 cup Panko crispy bread crumbs (Italian Style)
- 1 tablespoon olive oil
- Preheat oven to 375 degrees. Spray a cookie sheet with non-stick spray.
- Combine flour, garlic powder, salt and pepper and pour on a pie plate or a piece of waxed paper.
- In shallow bowl, beat together eggs, milk and salt.
- Combine the cheese and bread crumbs and lay on another piece of waxed paper or pie plate.
- Lightly coat each piece of chicken with flour.
- Next, dip floured chicken into egg mixture and then coat each side well with the cheese and breadcrumb mixture by pressing each chicken side into the breadcrumbs and cheese. (Make sure chicken is well coated.)
- Lay chicken pieces on a cookie sheet and sprinkle each piece with a little olive oil.
- Bake for 15-20 minutes depending on the size of your chicken pieces
- Remember: Always test your thickest piece of chicken to see if it’s cooked through.
- Try not to overcook chicken as this tends to dry it out.
