Crockpot Chicken Orzo Lemon Soup
Simple and Delicious Soup that is perfect for lunch or dinner.
- 1 lb. boneless chicken breasts
- 1/2 tablespoon olive oil
- 8 cups chicken broth, divided (low sodium)
- 3 cloves garlic, chopped fine
- 3/4 cup orzo pasta
- 1 small lemon
- 2 cups shredded zucchini (about 1 small)
- 1 cup diced carrots (about 2 carrots)
- 2 teaspoons chicken soup base
- 2 teaspoons grated onion
- 1 cup kale, chopped fine
- salt & pepper, to taste

Add everything to your crockpot with the exception of 2 cups of the chicken broth and the orzo pasta.

Cook on high for 2 hours. After 2 hours, remove the chicken and shred or cut into tiny pieces.

Place the chicken back into the crockpot along with the orzo pasta. Stir to combine.

Cover and cook for about 30-45 additional minutes. Add the juice from 1/2 of the lemon. Taste and add more lemon as needed.
*** Use the 2 extra cups of chicken broth if the soup gets too thick. This soup has lots of veggies plus pasta to absorb the broth. Just add additional broth as needed.
