
Creamy Pumpkin Soup Recipe

This is definitely a kid-friendly pumpkin soup recipe and so easy to prepare!
*If you chop the onions very fine in a food processor before cooking, they will simply melt into the soup and you won’t need to blend in a blender for creaminess.
Creamy Pumpkin Soup Recipe
- 1 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion (diced fine)
- 2 cloves garlic (diced fine)
- 1 15 oz. can of pumpkin
- 3 cups chicken broth
- 1-1/2 cup apple cider
- 3 oz. cream cheese
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Melt oil and butter in a medium saucepan; saute onions and garlic until very soft.
- Add pumpkin to the saucepan and stir.
- Whisk in broth, apple cider, cinnamon, salt, and pepper.
- Simmer soup for 15 minutes.
- Add cream cheese to the soup in small pieces and cook for another 2 minutes.
