
Classic Wedge Salad
In the age of healthy eating, the classic wedge salad has experienced a surge in popularity. While you can add anything you want to this lovely salad, and can, indeed, use any type of lettuce, I’d like to share with you the classic recipe.
For this version, you will need a head of iceberg lettuce, cleaned, with the core cut out. Cut into wedges – for an adult, usually 1/6 -1/4 of the head is plenty.
Sprinkle any toppings you like over the top – everyone will make theirs a bit differently. Generally you would find some red onion, tomato, bacon, and some blue cheese. Blue cheese is the real winner in this dish – and is the classic dressing to drizzle (or pour) over the top. Don’t skimp on this. If you don’t make your own, buy a really good brand. This is a meal in itself, but can also be topped with any grilled meat.
Our Classic Wedge Salad starts with Bacon!

Preheat your oven to 400 degrees. You will need about 2 slices of bacon per salad. Lay foil on a rimmed cookie sheet and lay your bacon slices out neatly.
Cook for about 15 minutes. Check to see if the bacon is done to your liking. Drain bacon slices on a paper towel and then slice into small pieces.
Then we Add some Garlic Toast Croutons

Garlic bread croutons are simple to prepare. Preheat oven to 400 degrees. Lightly slice both sides of white bread with butter. Sprinkle one side with a small amount of garlic salt and then a few shakes of Parmesan cheese. Bake in the oven for about 6-8 minutes, flipping once. Make sure the bread has browned before flipping. Remove from oven and let sit for about 5 minutes before cutting into cubes.
What about the Dressing?
The blue cheese dressing is simple. Just put about 1 tablespoon of blue cheese crumbles in a bowl with 1/2 cup of real mayonnaise. Crush the blue cheese just a little bit with a fork. Add 1 tablespoon of sour cream and 1/4 teaspoon of garlic powder. Stir in about 1/2 tablespoon of milk or cream to start. See if that’s thin enough for you. That’s it! You can even leave out the sour cream and garlic powder and it will still taste yummy.
You gotta love iceberg lettuce! So crisp and delicious.
