Chicken with Maple Syrup and Mustard
- 6-8 chicken thighs
- 1 tablespoon olive oil
- 2 cloves garlic (minced fine)
- 1 small lime
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons stone ground mustard
- salt & pepper
- Prep chicken by squeezing the juice of the lime on both sides of the chicken followed by lightly salt & peppering.
- Using a large skillet with a lid, brown chicken in oil on both sides.
- Add garlic to the pan and continue to cook for about a minute.
- Mix together maple syrup, both mustards, and a few shakes of salt.
- Pour mixture over chicken and bring to a very light boil.
- Reduce heat; cover and simmer for 20-25 minutes or until chicken is cooked through.
- Flip once while cooking.
This chicken dish is also delicious baked in the oven.
Baked Chicken with Maple Syrup, Mustard & Lime
Preheat oven to 350°F. Whisk together the maple syrup and both mustard. Add a few shakes of salt.
Lay the pieces skin-side up in a casserole dish.
Squeeze lime juice over chicken and then lightly salt and pepper.
Spoon the syrup mustard sauce over the chicken.
Bake for about 20 minutes covered. Remove cover; turn and baste and cook for an additional 20 minutes.
