
Chicken with Lime and Coconut Milk – Simple and Delicious

Here is a chicken dish that is perfect for busy days when you don’t have a lot of time to cook.
Chicken with Lime and Coconut
This is a great recipe that pulls together quickly,
- 8-9 boneless skinless chicken thighs
- 1 tablespoon oil
- 1 tablespoon butter
- salt & pepper
- 1 lime
- 1/2 teaspoon ginger
- 2 cloves garlic, chopped
- 1 can coconut milk
- Squeeze a small amount of the lime over chicken.
- Lightly salt and pepper both sides of the chicken and let sit for about 5 minutes,
- Using medium-high heat, melt the oil and butter in a large skillet and sear chicken on both sides until well browned.
- Lower the heat to medium and add garlic to the pan. Cook for about 2 minutes, careful not to burn.
- Add the coconut milk and ginger to the pan. Move chicken around to stir and combine.
- Squeeze the remaining lime over all.
- Bring to a very light boil; cover and reduce heat. Cook covered for about 10 minutes.
- Uncover and let simmer on low for about 10 -15 minutes, depending on the size of your chicken pieces.

Searing means to “brown food quickly” on all sides over high heat. This locks in the juices and gives us a tastier chicken.
This dish is delicious served with brown or white rice. Drizzle the sauce over the rice.
