
Broccoli and Stuffing – Easy and Delicious Broccoli Casserole with Stuffing

This broccoli and stuffing casserole with cheddar cheese is a delicious way to put a little more appeal into eating veggies. Broccoli and stuffing is so simple to prepare, and anything that is simple and delicious with broccoli is a winner!
Cook the thawed broccoli in chicken broth for a few minutes before adding the stuffing and cheese. Mix well and let sit for 4-5 minutes. Serve just like it is, or bake in the oven with additional cheese. Either way, broccoli and stuffing with cheese is a winning dish that the whole family will love.

Broccoli and Stuffing Casserole
This is a great recipe to get your kids to try broccoli! It’s hard to resist when added with stuffing and a little cheese.
- 1 (10 oz.) package chopped broccoli, thawed
- 1-1/2 cups chicken broth
- 1 tablespoon butter
- 1 (6 oz.) box stuffing (use Kraft stove top)
- salt & pepper to taste
- 3/4 cup shredded cheddar cheese

Thaw broccoli in the microwave for about 4 minutes. Make sure broccoli is well-thawed.

Preheat oven to 350 degrees.

Simmer thawed broccoli for a few minutes in chicken broth. Lightly salt and pepper the broccoli as it cooks.

Add the stuffing mix to the pan with the cooked broccoli and stir through.

Stir in 1/2 cup of cheese.

Cover and let sit for about 4 minutes.

Pour mixture into a casserole dish and bake uncovered for 10-15 minutes. Add 1/2 cup of cheese to the top and put back into the oven to melt.

Simmer the thawed broccoli for a few minutes in chicken broth, butter and salt & pepper before adding the stuffing mix.

Add stuffing and cheese to the broccoli and stir through. Cover and let sit for about 4 minutes. You could serve exactly as it is and it would be great!
To Make Fun Broccoli and Stuffing and Cheese Balls –
Lay foil on a cookie sheet and spray with non stick spray. Preheat the oven to 375 degrees.
Mix the beaten egg with 1 tablespoon of milk and mix through the broccoli stuffing. I like to use my hands for this.
Form 6-7 meatball sized balls and lay on the cookie sheet. Bake for 12 minutes. You can also put them under the broiler for a minute to give them a little extra crunch.
