
Baked Potato with Meatless Vegetarian Chili for Dinner
Yum! A nice hot baked potato smothered in chili and cheese! We love going meatless for #meatlessmonday and we know you will too! Not only does it save tons of money, but it’s good for you to go meatless at least once a week.
Chili has always been a healthy meal, and adding extra veggies gives it a little extra nutritional boost. Chili can be low in sodium when you use salt free tomatoes and use the seasonings for flavor instead of adding additional salt.

Grate some fresh cheddar cheese to top the chili, chop up some lettuce for a salad, and you have yourself a meatless healthy meal for dinner tonight!
First Bake the Potatoes
Preheat your oven to 425 degrees. Scrub 4 potatoes and lightly salt the outside skin. Set potatoes directly on your middle oven rack and bake for about 1 hour or until potatoes are easily pierced with a fork. Remove from the oven and set each potato on a dinner plate and top with ladles of chili, grated cheddar cheese, and a dollop of sour cream.
Save any leftover chili for lunch the next day.
Baked Potato with Meatless Chili
Healthy Meal of Baked Potatoes topped with Vegetarian Chili
- 4 medium baked potatoes
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 small green or red bell pepper, chopped
- 3-4 cloves garlic, chopped fine
- 3 cups vegetable broth
- 1 small can tomato sauce
- 2 15 oz. cans kidney beans, drained
- 1 15 oz. can diced tomatoes
- 1/4 teaspoon ground black pepper
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon dried oregano
- shredded cheddar cheese
- Sliced fresh jalapeño peppers (optional)
- Using a large sauce pan, cook onions in olive oil over medium-high heat until tender.
- Add garlic and peppers to the pan and cook for about 4 minutes, stirring frequently.
- Stir in spices and cook about 1 minute, stirring constantly. Add broth, diced tomatoes, tomato sauce, and beans.
- Bring everything to a light boil. Reduce heat and simmer for about 30 minutes. Add a little more broth if necessary
