
Baja Chicken Tacos for a Delicious Family Dinner
What’s for dinner you ask? Chicken Tacos!
If you love tacos then you will double-love these quick and easy Baja Chicken Tacos! Marinated in fresh lime juice and a splattering of taco seasoning, these chicken tacos are going to be a huge hit with you & your family.
The chicken is tender and juicy and would also go very well in a chicken taco salad! Or eat any leftover chicken over a bed of brown rice or quinoa.

Baja Chicken Tacos
- 1-1/2 lbs. boneless chicken breasts (cut into 2" cubes)
- 1 lime
- 2 tablespoons taco seasoning
- 1-1/2 tablespoon olive oil (divided)
- salt & pepper
Toppings
- Chopped lettuce or cabbage
- tomatoes
- Shredded Mozzarella cheese
- Place chicken cubes into a bowl and squeeze the juice of 1 lime over all.
- Drizzle 1 tablespoon of oil over the chicken and mix through.
- Sprinkle chicken with taco seasoning; mix to make sure all the chicken is well coated.
- Let sit for about 30 minutes.
- If you want to marinate longer, leave in the refriderator.
- Heat the remaining tablespoon of oil in a skillet and saute the chicken for about 5 minutes or until the chicken is cooked through.
- Lightly salt & pepper chicken as it cooks.
- Lay lettuce and tomatoes on a flour tortilla. Lay cooked chicken pieces on top of the lettuce. Sprinkle with a little cheese and spoon on some tasty lime sauce.
Tasty Lime Cream Sauce
To make a easy & tasty lime cream sauce for your chicken tacos, simply mix 1/2 cup of mayonnaise, 1/2 cup of sour cream, 1 tablespoon fresh lime juice and a few dashes of salt, pepper and garlic powder.

Marinate Diced Chicken in Lime, Oil and Taco Seasoning.
Serve some homemade and healthy crockpot refried beans with your chicken taco dinner!
