Bacon, Lettuce and Tomato Sandwich – Our Perfect end of Summer BLT
The end of summer BLT’s are perfect for an easy dinner when you don’t have time to cook. The ripe summer tomatoes are unbelievably delicious right now and there is no better way to use them than on a fresh bacon, lettuce and juicy tomato sandwich.
Everyone likes a little bacon now and then and if you have scratched bacon off your list of foods to eat you may want to reconsider with the end of summer BLT!
Frying the Bacon
Lay the slices of bacon in a cold skillet so they spread out evenly. You may have to this in two batches if you have a lot of bacon. Patience is key here … don’t rush the bacon. Place the skillet over medium heat and let the bacon cook for a bit without turning. I know this is hard … oh my we want to flip that bacon! Once it starts to sizzle give it a minute and see if it lifts easily. When it lifts easily, flip the bacon and cook on the other side. Continue flipping the bacon so it cooks evenly on both sides. Drain the bacon on paper towels to remove most of the grease.
Baking The Bacon

You can also bake the bacon if you prefer. This is a rather simple method and one we use often. Preheat your oven to 400 degrees. Lay the bacon strips on a cookie sheet lined with foil. Bake for 10 -15 minutes or until it’s done to your liking.
Picking the Best Tomatoes
Look for the largest, juiciest tomato you can find. You want the type of tomato that is soft with lots of juice. I like to use lots of Bib lettuce and plenty of mayonnaise mixed with plain yogurt. This adds such a great flavor without all of the fat. Don’t forget a little salt & pepper on the tomatoes … yum!
Get a double decker sandwich going and use eggs. Your favorite eggs will be fine. I like mine hard boiled and sliced, but you can also add scrambled eggs.
