
AWESOME OVEN FRIED CHICKEN – Baked and Not Fried
We’ve made this awesome oven fried chicken recipe for about 10 years, and we never tire of it. And, it’s just a little more delicious in the summer when you can serve with fresh corn and summer vegetables!
Original recipes for oven fried chicken can call for a full stick of butter, but this recipe works well with 3-4 tablespoons.
The combination of seasonings really enhance the flavor of this chicken recipe and give it that down-home fried chicken taste.
Awesome Oven Fried Chicken
- 3 lbs. mixed chicken thighs and legs
- 3-4 tablespoons butter
- 1/2 tablespoon dried parsley to sprinkle over chicken
COATING MIXTURE
- 1/2 cup flour
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon dried sage
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 1 teaspoon marjoram
- 1 teaspoon oregano
- Preheat oven to 400 degrees.
- Place a 9 x 13″ baking dish in the oven for a few minutes to melt the butter.
- Mix the flour and all the herbs in a large plastic resealable bag and shake well to blend.
- Rinse chicken with cold water and pat dry with a paper towel.
- Place chicken in resealable bag one piece at a time.
- Shake bag until chicken is well coated.
- Place chicken in the casserole dish in a single layer.
- Bake for 22 minutes and the remove chicken from the oven and turn over.
- Bake for an additional 22 minutes or until chicken is cooked through.
We use a combination of chicken thighs and chicken legs for this recipe and it comes out close to 3 lbs. -but you can use a little less.
