Apple Cinnamon Mini Muffins lower in Sugar
I love making these mini muffins on the weekend when I have a little more time. These muffins only use 1/4 cup of sugar which is typically about a whole 1/2 cup of sugar less than most muffins. And we all know – the less sugar the better!
To stay healthy we know to always stay far away from the baked goods section at your local grocery store. Baked goods that sit on the shelf for weeks and weeks are filled with such unhealthy ingredients. Don’t be tempted … they can be very alluring… keep walking.
I love mini muffins because they do a better job at portion control than a big fat sugary muffin.
But there are times when everyone needs alittle muffin.
APPLE CINNAMON MINI MUFFINS
1 1/2 cup flour
1/4 cup sugar
1 cup finely diced apple (use about 1 medium tart green apple)
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon nutmeg
1/2 teaspoon vanilla
1/2 cup milk
1/4 cup olive oil (use a lighter olive oil)
1 egg, beaten
Topping:
1 tablespoon butter
1 tablespoon flour
1-1/2 tablespoon brown sugar
1/4 teaspoon cinnamon
Preheat oven to 375 degrees.
Using a medium bowl, stir together dry ingredients. I like to use a wire wisk for this. Stir in apple.
In a small bowl, mix together milk, oil, and egg. Add this to the dry ingredients and stir until mixed through.
Spray mini muffin pan with non stick spray and spoon batter into the cups.
In a small cup mix together the topping and sprinkle the tops of the muffins lightly with topping. Bake for 15-17 minutes.
Sometimes I also just brush the top of the muffins with a little melted butter and then sprinkle with just a little brown sugar. This cuts way back on calories and sugar even more.
