Apple BBQ Sauce
Yesterday I made applesauce with no sugar. It was good, but I decided I would like it a lot more if it had just a bit of extra sweetness. So I decided to make some Apple BBQ Sauce. And make it lower sugar. Yes!
We live in the Kansas City area, and bbq sauce runs through our veins. We grill at least half our meals in the summer, and we have been known to man the grill during snowfall in the winter. It’s a sickness, really.
You absolutely do not need to can this recipe. You can cut it way down and just make one jar, or you could put it in freezer bags or containers.
Apples pair famously with pork. I think this will be good to marinate chops, as well as to baste with during cooking. And I’m thinking it would be good just to use as a dip for the meat.
Apple BBQ Sauce
Gather your ingredients:
8 cups applesauce (I used unsweetened. Sweetened would be fine.)
3/4 cups honey
1 cup turbinado or brown sugar
32 (oz.) tomato sauce or tomatoes
3/4 cups each white and apple cider vinegar (1 ½ cups total – can use all of one kind)
4 teaspoons salt
4 teaspoons smashed garlic
1 tablespoon garam marsala – (or 2 teaspoons cinnamon and ¼ teaspoon each cloves and nutmeg)
1 tablespoon chili powder
1 tablespoon paprika
1 teaspoon pepper and cayenne pepper (optional – to taste)
Put everything together in a large pot and cook down for about 2 hours until as thick as you want. I think I cooked mine too long, it was pretty thick.. Since I used tomatoes instead of tomato sauce, I used an immersion blender about halfway through. I am cutting back on sugar, so you might want more to suit your taste. And you do not need to use honey – just add extra sugar. To can, process in a hot water bath for 20 minutes for pints and half pints.
This approximate amount made 14 half pints.
I made half pints, as I plan on giving most of them away as gifts. Homemade food is always a hit!
What do you do with all the apple peels and cores? I suppose you could just put them in the trash or down the drain, but wouldn’t it be better if you recycled all that by giving it to your chickens or your compost pile??
