
Garden Delicious Zucchini – Popular Baked Summer Zucchini Squash Recipes
Gardens are bursting with vegetables and fresh zucchini right now. Everyone is looking for clever ways to give them away. We actually found a bag of zucchini tied with a ribbon on our front porch.
Everyone is also looking for clever ways to prepare them. Don’t worry if you don’t have any bags of zucchini showing up on your porch.
More and more local farm markets are popping up everywhere providing us with perfect fruits and vegetables this time of year.

Here are a couple of our favorite zucchini recipes that are easy to prepare and make great side dishes for dinner. These recipes are similar to prepare but very different on taste.
Oven Roasted Lemony Zucchini
2 medium zucchini, sliced into sticks or wedges
2 tablespoons olive oil
2 tablespoons lemon juice
2-3 teaspoons minced garlic, jarred
2 tablespoons breadcrumbs
2 tablespoons Parmesan cheese
1 teaspoon dried thyme
salt and pepper
Preheat the oven to 400 degrees.
Mix the olive oil, lemon and garlic. Lightly coat each piece of zucchini. Spray a cookie sheet with non-stick spray. Place the zucchini on cookie sheet in a single layer and sprinkle with thyme, salt and pepper. Mix the breadcrumbs and Parmesan cheese and lightly sprinkle on top of the zucchini. Bake for about 15-20 minutes. Brown under the broiler to get the tops nice and crispy.
Oven Roasted Zucchini with Fresh Marinara Sauce

2 medium zucchini, sliced into sticks or wedges
2 tablespoons olive oil
2 tablespoons breadcrumbs
2 tablespoons Parmesan cheese
1 teaspoon dried oregano
1 teaspoon garlic powder
salt and pepper
1 cup of shredded mozzarella cheese
Quick Marinara Sauce:
1 small onion, diced
1 clove garlic, diced
1 tablespoon olive oil
1 (15 oz.) can of whole tomatoes
salt and pepper
Preheat the oven to 400 degrees.
Cook the onion and garlic until tender. Add the whole tomatoes and chop using a fork. (I use my hands and just squeeze the tomatoes.) I also like to cut off any rough ends or rough pieces. Salt and pepper to taste. Let simmer for about 10 minutes.
Lightly coat each piece of zucchini with olive oil. Spray a casserole dish with non-stick spray. Place zucchini in the dish in a single layer and sprinkle with oregano, salt and pepper. Mix the breadcrumbs and Parmesan cheese and lightly sprinkle on top of the zucchini. Bake for about 15 -20 minutes. Remove from the oven and pour the sauce over the zucchini. Sprinkle with mozzarella cheese. Brown under the broiler until the cheese is nice and melted.
